Start Your Journey To A Healthier YOU!

Of COURSE you don't need to be ripped or skinny in order to be happy. 

But... Speaking from personal experience, being unhappy with your body & uncomfortable in your own skin can start to affect more than just you and your closet. 

That discontent spills over into other parts of your life...

  • Your confidence
  • Your social life
  • Maybe some of your relationships

....just to share a few from my experience!

I've worked hard in 2013 to develop healthy habits that I can maintain. I'm far from perfect. But perfection was never my goal. I want to live - eat pizza, candy, eat out...etc.

But... I don't want to be a slave to my poor body image.

So, with many many slip ups I have found balance & confidence. I'm proud of my hard work & comfortable in my own skin.

I wish that for every woman.

God designed us and made us in His perfect image. I'm done messing that up 

I hope you'll consider starting a journey like I did this coming new year. You will have to practice some self discipline - but the reward far outweighs the sacrifice!

HEALTHY! - Butternut Squash and Black Bean Enchiladas

Butternut Squash and Black Bean 

Enchiladas







Servings: 8 • Size: 1 enchilada • Old Points: 4 pts • Points+: 5 pts Calories: 185 • Fat: 6 g • Protein: 13 g • Carb: 29 g • Fiber: 13 g • Sugar: 2 g  Sodium: 864 mg • Cholesterol: 7.5 mg

Ingredients:
  • 1 cup red enchilada sauce (homemade or canned)
  • 1 tsp olive oil
  • 2 1/2 cups peeled butternut squash, cut 1/2-inch-dice
  • salt and pepper, to taste
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeno, seeded and diced
  • 10 oz can Rotel tomatoes with green chilies
  • 1 1/2 cups reduced sodium canned black beans, rinsed and drained
  • 1/4 cup cilantro
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 cup water
  • 8 medium low-carb whole wheat flour tortillas (I used La Tortilla Factory)
  • 1 cup reduced-fat shredded Mexican cheese
  • 2 tbsp chopped scallions, for garnish
  • reduced-fat sour cream, for serving (optional)

Directions:
Preheat the oven to 400°F. Place 1/4 cup enchilada sauce on the bottom of a large baking dish.

Heat olive oil over medium-high heat in large skillet. Add onions, garlic, and jalapeno and cook 2-3 minutes until onions become translucent and garlic is fragrant. Add cubed butternut, Rotel tomatoes, black beans, water, cilantro, cumin and chili powder and season with salt and pepper to taste. Cover and cook over medium-low heat, stirring occasionally, until the squash is tender, about 30 to 35 minutes.

Top Coach - FIRST Year Re-Cap!

Look what showed up on my doorstep yesterday.

This is SO crazy BECAUSE... I remember seeing OTHER people get these CRAZY flowers with words stamped on the petals... and I remember thinking to myself... I WANT THOSE!! 

This is a post for all of you CONSIDERING becoming a coach AND for those of you who are coaches but aren't really sure what you are going to accomplish.

Hear me out.

YESTERDAY was my ONE YEAR mark of being a coach. I signed up as a coach on January 14th, 2013. {Happy Anniversary self}. At first I signed up to keep myself accountable & for a discount - then I saw the BRILLIANT business model & I knew THIS was the solution for FREEDOM for my family.

I made it.

I made it to the ONE YEAR mark.

What would've happened if I QUIT when things got tough, or I heard a lot of NO's, or a lot of people MISUNDERSTOOD what my intentions were? What if I just QUIT? I would never have seen the PAY OFF that 1 year can make.

1 year.

My INSANE team MADE IT! My amazing team allowed me to finish 2013 as #29 out of 144,000 coaches... with just 11 months in the business. There is nothing crazy special about me... IT CAN BE DONE if you DECIDE to do it & #NEVERGIVEUP.

Clean Eating Wok-Style Garlic Chicken & Carrots

(Makes 6 servings)

Ingredients:
6 garlic cloves, peeled and chopped
1 small yellow onion, peeled and sliced
3 large carrots, peeled and sliced thin
2 tablespoons olive oil
1 1/2 pounds boneless, skinless chicken breasts, chopped into stew-size pieces
1/4 cup fresh parsley for garnish, chopped or torn
Salt and pepper to taste

Directions:
1.Combine the garlic, onions and carrots in a wok, and cook until the onions are translucent.
2.Add the chicken and cook until the chicken is done and the carrots are somewhat soft.
3.Toss in parsley just before removing wok from heat.
4.Add salt and pepper to taste.

Working from home... is it REALLY doable?

I am in LOVE with building a sustainable business from HOME! 

At first I was SO in love with Beachbody products (I still am)... but NOW... I am MORE in love with the business model for helping people.  I HAVE to pass it on. It would be SELFISH not to pass on an opportunity like this.


I thought at first... NO WAY will I quite my full time nursing job!! I LOVE being a nurse! But then...  I realized... MY GOAL is to be HOME with my (future) children when they are young. My husband WILL deploy next year... I won't be able to work as a traditional nurse if we have babies at home - and I do not want to ADD financial stress to the emotional stress of a deployment...



I am looking for people like me.

Wanting true financial freedom.
Willing to learn.
20's or 30's.
Women.
With a DESIRE to be healthy (not perfect).
Who LIKE helping people.
Who WANT to be DEBT FREE.
