Clean Eating: “Samoa” Bars

If you are like me.... you are ALWAYS on the hunt for clean, healthier versions of some of your favs. 

I mean.. is there ANY competition for Samoas? I think not!

Clean Eating: “Samoa” Bars





Ingredients:
1/2 c Peanut Butter, creamy 

1/2 c Honey
1/4 c Coconut Oil
1/2 tsp. Vanilla
2 Tbsp. Ground Flaxseed
1/4 c Cocoa
1 1/2 c Rolled Oats
1/2 c Shredded Coconut, unsweetened






Directions:
In a medium sized pot, melt peanut butter, honey and coconut oil, stirring until melted. Remove from heat. Stir in vanilla, flaxseed and cocoa until smooth. Stir in oats and coconut until well mixed. 
Line a glass dish with foil. (I used a 7x11 (2 quart) pyrex dish.) Pour mixture in and press gently. Place in the refrigerator until hardened, about 2 hours. Cut into bars or squares and store in an airtight container in the fridge. (If you double the recipe, it fits perfectly into a 9x13 pan.)


Options:
Below I sprinkled some large flaked coconut and a few chocolate chips in the foil lined pan and poured the mixture on top of it. When it was hardened, I flipped it over before cutting into bars.

Start Your Journey To A Healthier YOU!

Of COURSE you don't need to be ripped or skinny in order to be happy. 

But... Speaking from personal experience, being unhappy with your body & uncomfortable in your own skin can start to affect more than just you and your closet. 

That discontent spills over into other parts of your life...

  • Your confidence
  • Your social life
  • Maybe some of your relationships

....just to share a few from my experience!

I've worked hard in 2013 to develop healthy habits that I can maintain. I'm far from perfect. But perfection was never my goal. I want to live - eat pizza, candy, eat out...etc.

But... I don't want to be a slave to my poor body image.

So, with many many slip ups I have found balance & confidence. I'm proud of my hard work & comfortable in my own skin.

I wish that for every woman.

God designed us and made us in His perfect image. I'm done messing that up 

I hope you'll consider starting a journey like I did this coming new year. You will have to practice some self discipline - but the reward far outweighs the sacrifice!

HEALTHY! - Butternut Squash and Black Bean Enchiladas

Butternut Squash and Black Bean 

Enchiladas







Servings: 8 • Size: 1 enchilada • Old Points: 4 pts • Points+: 5 pts Calories: 185 • Fat: 6 g • Protein: 13 g • Carb: 29 g • Fiber: 13 g • Sugar: 2 g  Sodium: 864 mg • Cholesterol: 7.5 mg

Ingredients:
  • 1 cup red enchilada sauce (homemade or canned)
  • 1 tsp olive oil
  • 2 1/2 cups peeled butternut squash, cut 1/2-inch-dice
  • salt and pepper, to taste
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeno, seeded and diced
  • 10 oz can Rotel tomatoes with green chilies
  • 1 1/2 cups reduced sodium canned black beans, rinsed and drained
  • 1/4 cup cilantro
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 cup water
  • 8 medium low-carb whole wheat flour tortillas (I used La Tortilla Factory)
  • 1 cup reduced-fat shredded Mexican cheese
  • 2 tbsp chopped scallions, for garnish
  • reduced-fat sour cream, for serving (optional)

Directions:
Preheat the oven to 400°F. Place 1/4 cup enchilada sauce on the bottom of a large baking dish.

Heat olive oil over medium-high heat in large skillet. Add onions, garlic, and jalapeno and cook 2-3 minutes until onions become translucent and garlic is fragrant. Add cubed butternut, Rotel tomatoes, black beans, water, cilantro, cumin and chili powder and season with salt and pepper to taste. Cover and cook over medium-low heat, stirring occasionally, until the squash is tender, about 30 to 35 minutes.

Clean Eating Wok-Style Garlic Chicken & Carrots

(Makes 6 servings)

Ingredients:
6 garlic cloves, peeled and chopped
1 small yellow onion, peeled and sliced
3 large carrots, peeled and sliced thin
2 tablespoons olive oil
1 1/2 pounds boneless, skinless chicken breasts, chopped into stew-size pieces
1/4 cup fresh parsley for garnish, chopped or torn
Salt and pepper to taste

Directions:
1.Combine the garlic, onions and carrots in a wok, and cook until the onions are translucent.
2.Add the chicken and cook until the chicken is done and the carrots are somewhat soft.
3.Toss in parsley just before removing wok from heat.
4.Add salt and pepper to taste.

ROAST CHICKEN & SWEET POTATOES



Caramelized sweet potatoes and red onion are the bed for chicken thighs that cook up fast in a very hot oven—perfect for a quick healthy chicken dinner. Serve with a fall salad of mixed greens, sliced apples and blue cheese.




INGREDIENTS:
2 tablespoons whole-grain or Dijon mustard
2 tablespoons chopped fresh thyme or 2 teaspoons dried
2 tablespoons extra-virgin olive oil, divided
1/2 teaspoon salt, divided
1/2 teaspoon freshly ground pepper, divided
1 1/2-2 pounds bone-in chicken thighs, skin removed
2 medium sweet potatoes, peeled and cut into 1-inch pieces
1 large red onion, cut into 1-inch wedges


PREPARATION:
Position rack in lower third of oven; preheat to 450°F. Place a large rimmed baking sheet in the oven to preheat.
Combine mustard, thyme, 1 tablespoon oil and 1/4 teaspoon each salt and pepper in a small bowl; spread the mixture evenly on chicken.
Toss sweet potatoes and onion in a bowl with the remaining 1 tablespoon oil and 1/4 teaspoon each salt and pepper. Carefully remove the baking sheet from the oven and spread the vegetables on it. Place the chicken on top of the vegetables.
Return the pan to the oven and roast, stirring the vegetables once halfway through, until the vegetables are tender and beginning to brown and an instant-read thermometer inserted into a chicken thigh registers 165°F, 30 to 35 minutes.

Importance of Meal Timing with Fitness

When it comes to food, there are a few things that are very important: what we eat and when we eat. The timing gets to decide a lot of things. We have been taught that we should be eating a ‘breakfast, lunch and dinner’ every day… but as any FITNESS magazine will tell you – this is not ideal.

What you are eating will directly affect your body! Cardio & lifting ALL day will not help you achieve your goals if you are not eating properly. Proper nutrition has a huge impact on your health, your body’s ability to fight disease & illness, achieving a desired weight, or building a certain muscle tone.
I am following the Body Beast Nutrition plan – and I aim for 5 or 6 meals per day. Each meal includes the mixture of the three primary macronutrients: protein, carbohydrates & fats. Now, don’t worry too much about the nutrition lingo – just think about what you are eating and if one of those categories is WAY higher or WAY lower than the others – you should re-evaluate your eating plan. These three nutrients work together to build muscle & strip fat.

Here is a sample of what my typical eating looks like for the day according to the Body Beast eating schedule:

Workout

Post Workout Drink (immediately after workout)

Wait 1 hour:

Breakfast: usually 2 whole eggs & 4 egg whites, sometimes with salsa OR fruit and 1 piece of Ezekiel toast.

Wait 2-3 hours:

Beast-O-Matic Shake: Shakeology (+ ½ scoop of Hardcore Base Shake) with water, ½ banana, ½ tablespoon peanut butter.

Wait 2-3 hours:

Dinner: normally a lean protein & a ton of veggies

Wait 2 hours:

Snack: optional (almonds (5), ½ porton Shakeology, greek yogurt)
 

If you are following the Body Beast plan you are most likely trying to hit a certain number of calories every day – this is a very new approach to me. Normally, I do not count calories. Normally I eat 5 small portions of lean protein and veggies throughout the day – 6 days a week – with a cheat meal once a week – and at least 75oz. of H2O daily.
 
 

But, the Body Beast eating plan is a lot of food! If you are trying to increase your size, your body needs to materials to make it happen! FOOD! CLEAN FOOD!

 

No matter what plan you are following here are some basic rules to follow:

1.       Drink at least ½ your body weight in OUNCES of H2O!

2.       Do not go any longer than 4 hours in between meals (2-3 hours is ideal).

3.       Try to keep SIMPLE CARBS to a minimum (and if weight loss is your goal – keep carbs before 2pm).

4.       Be sure you are eating enough protein.

5.       If your brain tells you that you are “HUNGRY” try drinking a few glasses of water FIRST – dehydration can feel like hunger to the brain.

6.       Pay attention to your cravings. Why are you craving? Are you stressed? Did you eat ENOUGH healthy foods throughout the day? Are you bored? Figure out your patterns & break them.

7.       Don’t keep JUNK FOOD in the house – set yourself up for SUCCESS!

8.       Try to eat as soon as you wake up in the morning (a HEALTHY breakfast) or very soon after your workout.

9.       Do not consume SUGARY LIQUIDS all day long – this is a SURE way to gain unwanted fat.
 
10.      Give yourself GRACE if you “mess up” – this is a lifestyle change – NOT A DIET.
