The Ultimate Reset!

It's 7:30am and it is DAY ONE of the Ultimate Reset!


I am doing this for a few reasons...

I don't want to be a slave to food & emotional eating.

I want new healthy ideas for my family.

I want to feel the way my body was intended to feel.

I want to RESET and start FRESH!

I want to be at my OPTIMAL health for my husband and our future.

I want to be proud of myself for doing something tough ALL the way through!

I am doing this for me because I know that when I am taking the BEST care of myself, I am better able to love, serve and BE with others!

Start Your Journey To A Healthier YOU!

Of COURSE you don't need to be ripped or skinny in order to be happy. 

But... Speaking from personal experience, being unhappy with your body & uncomfortable in your own skin can start to affect more than just you and your closet. 

That discontent spills over into other parts of your life...

  • Your confidence
  • Your social life
  • Maybe some of your relationships

....just to share a few from my experience!

I've worked hard in 2013 to develop healthy habits that I can maintain. I'm far from perfect. But perfection was never my goal. I want to live - eat pizza, candy, eat out...etc.

But... I don't want to be a slave to my poor body image.

So, with many many slip ups I have found balance & confidence. I'm proud of my hard work & comfortable in my own skin.

I wish that for every woman.

God designed us and made us in His perfect image. I'm done messing that up 

I hope you'll consider starting a journey like I did this coming new year. You will have to practice some self discipline - but the reward far outweighs the sacrifice!

HEALTHY! - Butternut Squash and Black Bean Enchiladas

Butternut Squash and Black Bean 

Enchiladas







Servings: 8 • Size: 1 enchilada • Old Points: 4 pts • Points+: 5 pts Calories: 185 • Fat: 6 g • Protein: 13 g • Carb: 29 g • Fiber: 13 g • Sugar: 2 g  Sodium: 864 mg • Cholesterol: 7.5 mg

Ingredients:
  • 1 cup red enchilada sauce (homemade or canned)
  • 1 tsp olive oil
  • 2 1/2 cups peeled butternut squash, cut 1/2-inch-dice
  • salt and pepper, to taste
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeno, seeded and diced
  • 10 oz can Rotel tomatoes with green chilies
  • 1 1/2 cups reduced sodium canned black beans, rinsed and drained
  • 1/4 cup cilantro
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 cup water
  • 8 medium low-carb whole wheat flour tortillas (I used La Tortilla Factory)
  • 1 cup reduced-fat shredded Mexican cheese
  • 2 tbsp chopped scallions, for garnish
  • reduced-fat sour cream, for serving (optional)

Directions:
Preheat the oven to 400°F. Place 1/4 cup enchilada sauce on the bottom of a large baking dish.

Heat olive oil over medium-high heat in large skillet. Add onions, garlic, and jalapeno and cook 2-3 minutes until onions become translucent and garlic is fragrant. Add cubed butternut, Rotel tomatoes, black beans, water, cilantro, cumin and chili powder and season with salt and pepper to taste. Cover and cook over medium-low heat, stirring occasionally, until the squash is tender, about 30 to 35 minutes.

Clean Eating Wok-Style Garlic Chicken & Carrots

(Makes 6 servings)

Ingredients:
6 garlic cloves, peeled and chopped
1 small yellow onion, peeled and sliced
3 large carrots, peeled and sliced thin
2 tablespoons olive oil
1 1/2 pounds boneless, skinless chicken breasts, chopped into stew-size pieces
1/4 cup fresh parsley for garnish, chopped or torn
Salt and pepper to taste

Directions:
1.Combine the garlic, onions and carrots in a wok, and cook until the onions are translucent.
2.Add the chicken and cook until the chicken is done and the carrots are somewhat soft.
3.Toss in parsley just before removing wok from heat.
4.Add salt and pepper to taste.

ROAST CHICKEN & SWEET POTATOES



Caramelized sweet potatoes and red onion are the bed for chicken thighs that cook up fast in a very hot oven—perfect for a quick healthy chicken dinner. Serve with a fall salad of mixed greens, sliced apples and blue cheese.




INGREDIENTS:
2 tablespoons whole-grain or Dijon mustard
2 tablespoons chopped fresh thyme or 2 teaspoons dried
2 tablespoons extra-virgin olive oil, divided
1/2 teaspoon salt, divided
1/2 teaspoon freshly ground pepper, divided
1 1/2-2 pounds bone-in chicken thighs, skin removed
2 medium sweet potatoes, peeled and cut into 1-inch pieces
1 large red onion, cut into 1-inch wedges


PREPARATION:
Position rack in lower third of oven; preheat to 450°F. Place a large rimmed baking sheet in the oven to preheat.
Combine mustard, thyme, 1 tablespoon oil and 1/4 teaspoon each salt and pepper in a small bowl; spread the mixture evenly on chicken.
Toss sweet potatoes and onion in a bowl with the remaining 1 tablespoon oil and 1/4 teaspoon each salt and pepper. Carefully remove the baking sheet from the oven and spread the vegetables on it. Place the chicken on top of the vegetables.
Return the pan to the oven and roast, stirring the vegetables once halfway through, until the vegetables are tender and beginning to brown and an instant-read thermometer inserted into a chicken thigh registers 165°F, 30 to 35 minutes.

Quinoa Summer Salad

Hey everyone!!

I HAVE to share this recipe with you!! I learned it from Monica Ward's blog http://networkedblogs.com/LPItd. It is so super simple!! I switched things around a little bit - as usual. But its awesome!! (I didn't use an onion)

Here you go:

This is what you need:

Quinoa (I used 2 cups and cooked it in 1/2 water and 1/2 vegetable broth)
Black Beans
1 Mango
1 Red Pepper
BUNCH of cilantro
1 tablespoon Olive Oil
1 tablespoon Balsamic Vinaigrette
Optional: red onion

1. Cook Quinoa as directed. Make sure you let it SIT COVERED for 15 min when its done cooking.
2. Chop mango, pepper and cilantro.
3. Add beans to quinoa. (I used canned). STIR
4. Add mango, pepper, cilantro. STIR.
5. Add olive oil & balsamic. STIR.
6. Let it sit covered for a few more minutes to absorb all the flavors.
7. ENJOY!!

Oprah's Turkey Burger


Oprah’s Turkey Burger Oprah found a new favorite food when she tried this turkey burger at Mar-a-Lago, Donald Trump’s private club in Palm Beach. “I believe [it] may be the best turkey burger in the entire world,” she says. The Mar-a-Lago Turkey Burger is permanently available at the Trump Bar and Grille in Trump Tower in New York City, open to the public for lunch and dinner. It is also be served during lunch in Chicago at Sixteen, the Trump International Hotel restaurant.

I absolutely LOVE this burger. I like to eat in sans bun with a ketchup and served up with some avocado & veggies. I often double the recipe and freeze the extra patties.

I hope you enjoy this as much as I do!
 


Preparation

Servings: Serves 8 Ingredients
•1/4 cup thinly sliced scallions
•1/2 cup finely chopped celery
•3 Granny Smith apples , peeled and diced
•1/8 cup canola oil
•4 pounds ground turkey breast
•2 Tbsp. salt
•1 Tbsp. black pepper
•2 tsp. Tabasco® chipotle pepper sauce
•1 lemon , juiced and grated zest
•1/2 bunch parsley , finely chopped
•1/4 cup Major Grey’s Chutney , pureed

Directions

Sauté the scallions, celery and apples in the olive oil until tender. Let cool. Place the ground turkey in a large mixing bowl. Add sautéed items and the remaining ingredients. Shape into eight 8-ounce burgers. Refrigerate for 2 hours. Season the turkey burgers with salt and pepper. Place on a preheated, lightly oiled grill. Grill each side for 7 minutes until meat is thoroughly cooked. Let sit for 5 minutes.
